What's for Dinner, Fri., Feb. 21, 2025 [View all]

I made pinto beans in the slow cooker, so I shredded some pork roast and added it to the beans, along with an air fryer poblano pepper. Picked up some corn bread at the Hispanic market, which is the only one that can be depended upon for a Poblano. I know Marthe made some, too. Seems like a good choice for cold weather.

Later on, a salad. I have beets and feta cheese and will serve it with lettuce greens. Toasted hazelnuts over the top. Homemade vinaigrette.

Dessert: The Hispanic market has good cakes, so I bought some and will have a half piece with vanilla ice cream. Decaf coffee.
