I made pinto beans in the slow cooker, so I shredded some pork roast and added it to the beans, along with an air fryer poblano pepper. Picked up some corn bread at the Hispanic market, which is the only one that can be depended upon for a Poblano. I know Marthe made some, too. Seems like a good choice for cold weather.
Later on, a salad. I have beets and feta cheese and will serve it with lettuce greens. Toasted hazelnuts over the top. Homemade vinaigrette.
Dessert: The Hispanic market has good cakes, so I bought some and will have a half piece with vanilla ice cream. Decaf coffee.

(15,759 posts)I'm attending a catered Black History Month event at the Nashville Islamic Center.
"We are thrilled to invite you to an impactful engagement in honor of Black History Month, featuring our keynote speaker Dr. Amiri Yasin Al-Hadid. He is the creator of the African Studies department at Tennessee State University, the third principal of the Nashville International Academy, and a published author, who has provided invaluable insights to make this years event even more meaningful.
This year marks the 60th anniversary of Malcolm Xs martyrdom, and 2025 would have been his 100th birthday. To honor this, Dr. Al-Hadid will deliver a special keynote address on: "Shaheed El-Hajj Malik El-Shabazz (Malcolm X): Muslim and Human Rights Statesman."
In this event, Dr. Al-Hadid will explore the legacy of Malcolm X, shedding light on his role as both a Muslim leader and a fierce advocate for human rights. Join us for this memorable event as we celebrate Black History Month and honor the incredible contributions of Malcolm X to both the civil rights movement and the Muslim community.
Warm regards,

(1,354 posts)Steam-fried in evoo and veggie broth: sliced red onion, sliced red, yellow and green bell peppers, minced ginger and garlic. When done I added sliced mushrooms, air-fried Beyond Steak and a sauce I made of soy sauce, sugar, rice vinegar, red pepper flakes and corn starch. Served with brown rice. Hot oolong tea. Dessert is vegan banana bread my wife brought home from our local co-op. Cheers!🥂
