Thai Chicken Crunch Salad.

For greens, it has romaine and shredded cabbage. I'm using a chicken breast I put in the slow cooker.
Veggies are sliced carrots, cucumbers. Torn up cilantro. Crispy wonton strips and fresh lime.

The peanut dressing has rice vinegar, fresh lime juice, soy, honey, a little sugar, garlic, fresh ginger, cilantro leaves, and red pepper flakes, in addition to vegetable oil.

I have to praise cauliflower puree'. It was so good last night with the lamb shanks, but I had cooked up enough that I played around with it today in the blender as a pureed soup by adding 1/2 & 1/2. I only added salt and pepper along with parsley and it was so good and so easy to make. In addition, I added chicken broth.

One thing that makes it so easy is cooking it in the slow cooker, either with broth or water.

I also made up almost two gallons of kombucha. Pomegranate and cranberry flavors.

Dessert: Decaf and stewed apples with Greek yogurt, cinnamon, and nutmeg.
