I tried a new vegan mac ‘n cheese recipe that was really tasty. The sauce was made from soaked and ground raw cashews, nutritional yeast, oat milk and a pinch of turmeric for color. I started by sautéing minced onion and shallots in Miyoko’s butter. Then I added the cashew paste, oat milk and yeast. After this came to a boil it simmered for a few minutes. Next I blended the cheese mixture with cooked whole wheat elbow macaroni and some cooked green peas. Boy, it was super delicious, but filling. Also steamed some broccoli and mushrooms as a side.
