What's for Dinner, Sun., June 30, 2024 [View all]

On Fri. Callalily posted a pic of a dish using zucchini noodles. I liked the curly way they cooked, so I was looking for a recipe I could make using a zucchini I'd purchased. Sadly, no zucchini from my garden....YET.

Consulting Joshua McFadden's cookbook Six Seasons A New Way with Vegetables, I found "Squash Ribbons with Tomatoes, Peanuts, Basil, Mint, and Spicy Fish-Sauce Sauce." This title pretty much covers everything in it except for the scallions.

We're having a thunderstorm shortly, so I figure I'll do this since I can't be working outside.

I'll poach salmon to go with it. I will probably put balsamic glaze on the top. Serve it cold.

Dessert: a few windmill cookies and some cold tea.
