What's for Dinner, Mon. May 13, 2024 [View all]

Cold plate of vegetables: carrots, celery, cucumbers. Olives, artichokes. banana ring peppers. Vinaigrette and also Caesar salad dressing as the dips.

Baba ganouj (Mollie's spelling). I cooked it in the slow cooker because I read that eggplant is best cooked at a low, slow heat. This is a really easy dinner. The tahini and all the ingredients went right in with the eggplant. No-carb pitas to have with the baba ganouj.

Dessert: Hot ginger drink with agave. A few Werthers.
