What's for Dinner, Thurs., May 7, 2026

Eggplant parmesan.

Spinach salad.

Earl Grey tea, cold.

Cookies and milk for dessert. The cookies are chocolate chip or chocolate, also there are sugar cookies, too.

Big salad of shredded baked chicken breast, iceberg lettuce, spinach leaves, celery, cucumber and green olives with ranch dressing.

I was going to put more veggies and some cheese in it but the bowl was full.

Mug of hot Earl Grey tea.

I accidentally dropped a lettuce piece on the floor and Ducky grabbed it. Fifteen minutes later it was uneaten on the couch.

6. Oven Baked Broccoli Cheese Frittata

Steam-fried in evoo and veggie broth: chopped onion, red bell pepper, chopped broccoli, sliced mushrooms and minced garlic. I sprayed a baking dish with evoo, spread out the veggies, poured plant-based Just Eggs over them and baked until the eggs were set. I spread shredded vegan cheddar over the frittata and melted it under the oven broiler. Baked apple slices for dessert. Cheers!🥂

Yikes. Those baby carrots look older than one week… It’s okay, though, because I’m eating in the light of the computer monitor and can pretend I didn’t notice.

I was reading a nutrition book and it says to have hummus once a day.

So I put some chickpeas in my slow cooker and when they were done, I was going to make some delicious hummus. There are so many kinds of recipes, like roasted garlic and caramelized onion. Instead, they were warm and infused with thyme so I had a small bowl of them with a little olive oil butter. Outrageously good!

It is amazing to me how something so simple can be so delicious.

I don’t know if I could eat it once a day, but it is a fave. High protein and except for the TJ’s wheat thins, low cal.

I do like to mix it up—sometimes I add tahini, sometimes peanut butter. I’ll use the leftovers spread in a WW tortilla to bolster a Gardein chick’n strip wrap with lettuce or sprouts. This batch had roasted red peppers, so it’s kind of smoky but sweet.
