What's for Dinner, Sat., Oct. 25, 2025

Chicken pot pie and a tossed green salad.

Kombucha: pineapple kiwi.

Dessert: stewed apples, cinnamon, and Greek yogurt.

We have multiple entries for a brand new Jeep they are giving away tonight at the Golden Nugget. If we win it, we'll give it to our son. So we will eat at the casino bar and grill.

4. Leftovers/Grazing

I'm going to wait to eat until TJ leaves for work in a couple of hours

I'm going to choose some of:

Appetizer - Laughing Cow, Gouda, cheddar jack cheeses and wheat thins. Green olives, pickles ...

Meats - Crispy chicken breast strip courtesy of Tyson, baked chicken leg, pork chop - pan fried and seasoned with chili powder etc., bacon

Fruits - cantaloupe, blueberries, strawberries and banana and maybe Greek yogurt

Veggies - I see nothing but salad veggies, unless I fix something from the freezer or a can

I am thankful that I have so much to choose from.

Baked Pacific cod and butternut squash from last night for K. I'll toss some leftover stir fried chicken and cabbage into noodles, and make us a spicy cucumber salad to share. Everything is better with chili oil!

I’ve got like six bags of Quorn nuggets (ridiculous sale price so stocked up) and was planning on making a big pot pie with some.

Sadly, my son just talked me into a grocery trip and Publix lured us into too many BOGO deals on things we really don’t need, so as soon as we got home and packed our goodies away, he had to crack open a giant jar of huge dill pickles—so of course, I joined him. Now it’s 8:30 and our appetites are gone… It may be midnight before either of us is thinking about food again.

So much for being adults.

Went on a long hike in the late afternoon so we got takeout on the way home. We shared our pumpkin curry and pad Thai entrees. Was terrific. Cheers!🥂

Brining pork chops (water, salt, brown sugar, apple cider vinegar) overnight for 12 hours,
and then
Inaugurating my new (first) slow cooker. I put in a thin-sliced yellow onion, a couple of cups of sliced brown mushrooms. Seared the chops (rubbed with salt, pepper, paprika, garlic power), deglazed the pan with beef broth and red wine, which were added to the above along with a can of condensed cream o mushroom soup.
After six hours on low, the meat fell off the bones. Served with mashed potatoes. It was so delicious I forgot to prepare the asparagus I’d bought!
Yum!
