What's for Dinner, Fri., Oct. 24, 2025

Cauliflower pizza crust for which I still have to find my recipe. It's been years since I've made it.

The usual toppings: peppers, tomatoes, and Beyond sausage crumbles.

Tossed green salad using baby romaine and arugula. Sliced fennel, toasted walnuts, and sliced apple. I have to come up with a good homemade dressing for this, so I'll be consulting one of my new cookbooks.

Kombucha: ginger-cider.

Dessert: Light vanilla ice cream with toasted cashews.

My sister is visiting for the weekend so I’m roasting a pork tenderloin, her favorite. I made small incisions then stuffed garlic slivers in them. We’ll have stuffing, gravy, broccoli and a salad. Chardonnay and ice water.

Not sure what's in the freezer. I know we have flounder fillets, and perhaps cod. I'll probably pan fry it and serve with prik nam pla. I have some butternut squash I can roast, and lots of salad possibilities. Maybe rice. Sounds like dinner to me! It's still mid-80s temperatures here, so I can live on salads alone, and we've been eating outside again.

I have enough mushrooms & milk to make at least 2 cups of mushrooms soup and wide noodles, onions, darlic and fresh dill.
Some mix of all of those ingredients that will look like a stroganoff.


Or maybe mushroom burgers with buttered dill noodles on the side.
Unclear at the moment.

We’re getting some much-needed rain here in Vermont, so I’ll have a Happy Meal tonight!

Asparagus/lemon/Parmesan quiche
Beets
Lemon water
Old fashioned cocoa later with a piece of cinnamon/raisin toast

We had our first killer frost this morning. I still have sweet onions growing in the garden, but everything else is dead. Time to dig up the sweet potatoes. Hopefully tomorrow I'll get around to doing that. I been cutting firewood for the last few days, and my old body is sore.

Steam-fried in evoo and veggie broth: chopped onion, red bell pepper, carrots, cabbage, scallions, zucchini, sliced mushrooms and minced garlic. When done I stirred in homemade marinara, chopped fresh basil and oregano and cooked farro wheat. Topped with a chopped up Beyond Sausage after plating. Apple crisp for dessert. Cheers!🥂
