What's for Dinner, Mon., March 3. 2025

Thai coconut curry with shrimp. It has veggies like carrots, celery root and golden beets. Lemongrass, coconut milk, vegetable broth.

The recipe says to serve with rice, but I'll be using couscous.

Peach kombucha.

Dessert: crumbled yellow cake with vanilla ice cream and blackberries. Toasted walnuts over the top.

2. Turkey and rice

Surveying the freezer I found some turkey breast and turkey stock from December.
Added celery, carrots, onions, and garlic and simmered with brown rice.

I guess it would be soup if I added a lot more water or stock, but I didn't.

Low carb chocolate ice cream later.

These are leftovers. I need to use these up because I'll be making a vat of jambalaya tomorrow.

Steam- fried in sesame oil and veggie broth: chopped onions, red bell pepper, bok choy, sliced cabbage, snow peas, sliced mushrooms and canned water chestnuts, minced ginger and garlic. Stirred in a sauce made from tamari, water, rice wine vinegar, date sugar and corn starch. Added air-fried crispy tofu and cooked whole wheat thin spaghetti and tossed everything together. Iced black tea with lemon. Cheers!

Became potato soup and curried potatoes and peas. Have leftovers too of course.
