Every time I see someone at this thread having a tomato soup and grilled cheese sandwich, I say, "I'm gonna' do that!" Today was the day. Cold here, so soup is ideal. I made creamy tomato soup and I am experimenting with 2 kinds of cheese sandwich on marbled rye. One has Parmesan and the other has Cheddar. So far Parmesan is winning.
Ginger kombucha.
Dessert: vanilla ice cream with cherry plum raspberry topping. Toasted walnuts.

(1,354 posts)Drain and mash a half block of firm tofu. Steam-fried in evoo and veggie broth: chopped onions and red bell pepper, sliced carrots and mushrooms, minced garlic. When soft I added cut asparagus. When done I stirred in the tofu, Jax Tofu seasoning, chopped parsley and Penzys Sunny Paris herb blend. Leftover Apple Cake for dessert. Cheers! 🥂

(11,017 posts)Chicken thighs cooked with sofrito, tomato sauce, and rice. Sort of a clean-out-the-fridge dish: we had leftover tomato sauce, some Anaheim peppers, chicken stock, and we always have onions. There will be plenty of leftovers for later in the week.
