Stuffed peppers, orange and green. They are stuffed with couscous, grated Cheddar, bits of vegetables like zucchini, carrots, and onion. Either pork bits or chicken (I have both prepared.)
I made these a few weeks ago and they turned out to be very tasty, not to mention fun on the second or third day because the couscous and melted cheese made it possible to slice them, and give them a nice crispy finish.
Spiralized zucchini with herbs.
Kombucha: Pomegranate.
Dessert: vanilla ice cream and blackberries with toasted walnuts.

(1,354 posts)Leftover Split Pea Vegetable Soup from the other night and tofu egg salad sandwiches. Mashed tofu mixed with minced red onion, red bell pepper, celery, sliced black olives mixed with a dressing made with vegan mayonnaise, sweet pickle relish, Dijon mustard, Jax Tofu seasoning, and chopped parsley. The bread is Aldis large sliced multigrain bread. Cheers! 🥂
