What's for Dinner, Thurs., Feb. 27, 2025

Low-prep dinner for me tonight, since I had to go to my CPA to do taxes. Yay, that's over. Picked up a grilled chicken and quickly made my own sides for tonight--BBQ pinto beans with homemade sauce, an air-fried Poblano half, sliced cucumber and tomato salad with dill and vinaigrette.

Ginger kombucha.

Dessert: decaf coffee and a brownie, small-size.

1. Chicken Caesar salad

Romaine, red onion, anchovies, Caesar dressing with slices of pan-grilled chicken breast meat. 13 croutons of course. We have half a bottle of Chardonnay left. Vanilla ice cream with strawberries for dessert.

Chicken thighs (skinless, boneless), sweet potatoes, broccolini

I'm having ice cream for dessert. Enjoying the last meat meals before Great Lent kicks in next week. Just to make life miserable for me, the cook, my husband informed me that he is now on a keto/paleo diet for his diabetes to keep his blood sugar within range. Heretofore we had done a lot of rice and beans during Lent. Now it's going to be lots of fish and salad.

Carrots, celery, onions, potatoes, mild peppers, Rochester sauce and beef roast.

Mixed nuts with raisins for a snack later.

Everything but the broccoli is making use of leftovers.

As a side note, I just dehydrated a pound of mushrooms - I was at the co-op and realized that a bulk pound there cost what 4 ounces cost at my grocery. (It was also senior discount day, so I'm factoring that in.) I left them in the dehydrator for about 17 hours and they're quite crispy. Turns out a pound of mushrooms, once dried, comes to about a pint volume so I'll have to do it again to fill up the jar. I think this is going to be worthwhile for soups and the like.

5. Pasta with Cabbage and Mushrooms

Sautéed in evoo and veggie broth: chopped onions, shallots and garlic. When soft I added mucho sliced cabbage and shredded carrots. Last I added slices cremini mushrooms, butter beans and chopped parsley. Finally I added Penzy’s Sunny Paris spices, dried dill and a dollop of Miyoko’s butter. Tossed the veggies with cooked whole wheat rotini. After plating, garnished with chopped fresh dill weed. Baked Carrot Cake Oatmeal for dessert. Cheers! 🥂
