A dish best served cold

It is winter but eventually it will be spring and things will get hot

So it is not to early to chat about a dish best served cold

I like guacamole, gazpacho, and vanilla ice cream, for example

Alas, I currently live in assisted/independent living, and I'm currently not cooking, although I have a small kitchen (microwave, fridge, 2 burner stove-top) and I am REALLY missing my chicken stew. Other residents have full kitchens, and John (another resident) told me today that he would be happy to let me use his full kitchen to cook. I will take him up on that.

Oh, and I also make chocolate chip cookies that could bring about world peace.

5. Horiatiki salata -- greek tomato & feta salad

There are dozens of recipes available. My favorite approach is to layer red onions, then cucumbers in the bottom of the bowl, then layer feta on top, then chopped tomatoes, and sprinkle with salt, then oregano. The salt pulls the juice out of the tomatoes which then combines with the feta to make a rich dressing. Let sit for 1/2 to 2 hr, then add a little olive oil if you like (but it's really not even necessary), toss thoroughly and serve with a *spoon* to get all that juicy dressing.

Don't overdo it on the salt -- I usually use five medium tomatoes and 1 tsp of salt (or salt replacement, which works the same way). Lots of juice from the tomatoes, which then drips onto the feta, then the cucumbers, and finally the onions, when the most savory juice ingredients are on the top.



For dessert, there's nothing to compare to mochi Unless it's akhbar mashdi ice cream.

With Italian sausage slices and peas.

Last week I made a western omlette and couldn't eat it all, so I saved the rest for later. It tasted better cold I thought as I ate the rest of it in front of the open refrigerator door.

and use it like a side dish. Try with fresh mint instead of fresh dill some time. Yum ..... on warm pita or flat bread. good with meat chicken.

My fave includes a big roasted red pepper when I whip up the garbanzos in the Ninja. Onion powder, a little salt, olive oil, a spoonful of tahini or PB, and a drizzle of toasted sesame oil and/or sesame seeds on top. If I’m lucky, I’ll get a dinner AND a lunch out of it. Just need carrot/celery sticks and maybe crackers for dipping.
