What's for Dinner, Wed., Feb. 26, 2025

I have to go to another town south of me, so I am meeting my friend for dinner at a Korean BBQ place.

You can grill at the table at this place, which is one reason I like it.

Might post back if I get home early enough.

Next time you go to Aldi, check out the organic cashews, lightly salted. My fave, but I buy a lot of nuts at
Aldi because the prices are fairly good.

likes Blains Farm & Fleet in Champaign Illinois for nuts too. We get mostly almonds, walnuts, cashews, pistachios and raisins at the Farm & Fleet. Champaign is a little out of our way, so we don't get there that often.

3. Green Split Pea Vegetable Soup

I cook the peas in a combination of veggie broth and water with bay leaves until they break down. In a separate pot I steam-fry in evoo and veggie broth: chopped onions, celery, cabbage and red bell pepper, sliced carrots and minced garlic. When the peas are fully broken down I add the cooked vegetables to the peas and more veggie broth to thin it out if it’s too thick. Finally I add chopped parsley and salt and pepper as needed. Went to the bakery next door.
Have three, mini milk bread rolls with ham and cheese. So tasty. Will have a small salad with them at work. And share one with the cook.

is a handy item to have in the frig. I use it for snacks with my sesame sauce and this morning I made the most fabulous omelette with it, adding cheddar cheese and ham bits.

Cranberry beans are one of my faves, too. The RG is better at cooking them than I, though.
