(18,510 posts)There was no plan half an hour ago.
The half green cabbage in the refrigerator was saying "use me soon." It is now simmering.
Some small Yukon gold potatoes will join it.
I was searching the freezer for Andouille sausage when I spotted the kielbasa. It will be cut in short lengths and added to the pot when things are almost done.
I have some tasty sourdough bread to go along with it.

(1,060 posts)Two hurricanes means my and sons cars are both down for repairs, theres no easy way to get to a supermarket, so Im pretty much living on granola and frozen burritos
But damned if I didnt manage a shopping trip on the way home the other night and splurged on Brussels sprouts, strawberries, cat litter, and whatever else I could manage to carry home on the bus.
Tonight, its Brussels sproutsprobably the whole damned pound of themhalved and sautéed in olive oil with dried cranberries and walnuts, then a big splash of rasperry-walnut vinaigrette until its sticky. Its earthy, sweet, tart, and and apparently something my soul requires after this long drought. For some reason (malnutrition? ), this is a dish I often crave. Even my daughter has threatened to arm wrestle me for the last few bites.
And a couple giant strawberries for dessert. Yum!!

(39,551 posts)Brussels sprouts prepared that way is absolutely one of my favorite dishes. Yours looks delicious in the picture, along with the cranberries and walnuts. It's a bit of a coincidence that you must be talking about Helene and up here in NJ, on this end, my friend in FL and I were discussing how she is still not over those two hurricanes. She had to get a new car, also, and so did many of her neighbors (Treasure Island, right where the storm had a big impact). Her freezer was flooded and therefore decimated, and she's decided not to get a new one, being the only one left in her household now.
Anyway, glad you got some good, nourishing, healthy food and enjoyed it. Now you have me craving a giant strawberry.

(1,060 posts)Helene killed my clutch (Ive bought the parts but son still needs to find all his tools post move to make the repair) and Milton dumped a tree on his car (waiting for FEMA to cough up the money to bang the roof back out and replace the windshield). Followed by a forced move (landlord said hes getting too old to do the upkeep) and every possible complication since October, its been a struggle.
So yeah, you know things have been dire when youre craving simple fruit and veg. This feels like a turning pointand Im hopeful the car is back in business soon so we start to feel more normal.

(1,060 posts)Eating a pound of sprouts was folly. I made it a third of the way through them and came to a screeching halt. Not even room for one of my Cindy Lou Who-sized berries for dessert.
I now hear my gran laughing from the past about my eyes being bigger than my stomach.

(1,354 posts)Cut a couple Russet potatoes into cubes, tossed in evoo and spices. For the topping I made a chili with chopped onions, red bell pepper, celery, and minced garlic. I steam-fried the veggies in evoo and water. When done I added tomato paste, more veggie broth, cooked sweet corn, black beans and sliced mushrooms. I used chili powder, cumin, oregano, chipotle powder, paprika and cayenne for the spices. Plated the fried potatoes and ladled the chili on top. Then topped the chili with shredded vegan cheddar. Cheers!🥂
