What's for Dinner, Mon., Feb. 17, 2025

Pumpkin-rutabaga soup. Or "Swedish turnip," if you prefer.

Another recipe from that Ukrainian site I mentioned. Vegetable broth is added to the pureed pumpkin and rutabaga. It also has a little cream. I'm opting for prosciutto topping with toasted pumpkin seeds. I also sauteed a few rutabaga cubes to add more texture.

Prol'ly a salad and half a meatball sandwich.

Cherry kombucha.

Hot Earl Grey tea for dessert.

3. Roasted Golden Beet Salad

Oven roasted golden beets cut into cubes and tossed with minced shallots, sliced apples, and chopped watercress. For the dressing I made a tasty orange vinaigrette. I also air-fried a couple Field Roast Apple Sage Sausages as a nice side dish. Might have a bran muffin later. Iced green tea. Cheers!🥂
