What's for Dinner, Feb. 12, 2025

Lasagna. It's a meat lasagna from Trader's.

Tossed salad; very elaborate. Two types of lettuce, red tip and Boston. Also a little arugula. Has parmesan cheese cubes, artichoke hearts, feta cheese stuffed green olives, celery, cucumber, and homemade vinaigrette. I also had some oregano, so I pulled the leaves off it and tossed them in. Fennel rye croutons over the top.

Dessert: The Valentine's Day chocolates arrived from Italy! The RG sent them. So one of those (don't laugh, Emile) and decaf coffee.

…with either butter or a little jarred red sauce. Roasting some cubes of eggplant, and serving with a small green salad, as soon as my sweetie finishes her online class.

I just got my 2nd shingles vaccine jab this morning, feeling kinda crummy, so I sympathize!

Chicken pot pie.

No Valentine's Day chocolate here, but I will have a small bowl of chocolate pudding with a real tiny teaspoon of cool whip before bedtime.

6. Veggie Tofu Scramble

Steam-fried in evoo and veggie broth: chopped onions, sliced carrots, chopped orange bell pepper and minced garlic. When soft add sliced mushrooms and cut asparagus. When done mix veggies with a 1/2 block of drained and mashed firm tofu, 3 T of Jax Tofu Scrample, Penzy’s Fox Point seasoning and chopped parsley. Iced green tea with lemon. Cheers! 🥂

With Napa cabbage leaves.
The mixture was seasoned ground beef with onion and celery.
Topped with sweet chili sauce.

Then I had some potato salad at work.
