What's for Dinner, Mon., Feb. 10, 2025

Meatballs and egg noodles with parsley and butter.

Beet salad with feta cheese, served over tossed greens.

Kombucha: honey-lemon-ginger.

Dessert: one piece of chocolate and decaf coffee.

1. Super Bowl chili...

Always better the second day. This year I made it extra spicy and it's so good! Tonight I will have a bowl full over rice with a big dollop of sour cream on top. Whole milk on ice but no ice water like I usually have with every meal.

Why? Well, for those who don't know, water after dishes with hot red pepper, will turn up the heat. Therefore it's contraindicated.

Milk is the beverage that has cooling effects when the hot red pepper makes you cry.

Quiche with spinach and bacon. Salad of endive, ridicchio and red onion with Balsamic dressing. Freshly baked bread. Chardonnay.

6. Chicken and vegetable bake

sliced up a variety of vegetables (onion, potato, turnip, carrot) into a pan, put a boneless chicken thigh on top, and baked until the chicken was done - sort of a chicken pot pie without the crust, or gravy

Chopped romaine, red leaf and Savoy cabbage were the greens. Pickled beets, sliced red onion, black olives, green peas, sliced tomatoes and sliced mushrooms were the add-ons. Chopped smoked tofu was the protein. Homemade Thousand Island was the dressing. Cheers! 🥂
