What's for Dinner, Sat., Feb. 8, 2025

Chicken matzoh ball soup. I'm also using chopped leeks I had in my freezer from last spring's harvest. I had so many!

I found these fillings for piroshkis in my Mollie Katzen cookbook. I'm going to use a couple of them, only I'm using croissants instead of a piroshki.

1) Mushroom (has onions, pumpkin seeds, parsley, goat cheese).

2) Cabbage (has Savoy, onion, dill, carrot, horseradish).

Dessert: my friend stopped by with these wonderful date-filled Turkish cookies. He gets them whenever he travels. They are so remarkably beautiful, with a pattern in the dough, then the filling. Half of one of them (they're big!) and decaf coffee.

Baby spinach, cherub tomatoes, cucumber and shredded carrot. I felt the need for protein and spotted some leftover roast pork which I shredded on top. Then some Kraft Zesty Italian dressing over it all.

I'll have more later, most likely grazing leftovers in the frig.

I am being practical and have made a batch to last for the next 3 nights.
I will make a fresh greens salad with Italian dressing (olive oil balsamic) tonight.

Breakfast Casserole

A rectangular quiche.

A dozen eggs (you read that right), cheddar cheese, Monterey Jack cheese, 1/2 & 1/2, cooked sausage, cooked minced green pepper, garlic salt, onion powder, black pepper, poured over hash browns, baked in a 9 x 13 casserole dish.

I've earned this.

11. Snap Pea Stir-fry and Pasta

Steam-fried in evoo and veggie broth: chopped onions, sliced carrots, sliced mushrooms and minced garlic. When almost done add trimmed snap peas and continue cooking until peas are done but still have a slight crispness. Toss with cooked whole wheat penne and Miyoko’s butter. Top with vegan parmesan, crumbled Morning Star bacon strips and chopped parsley. Cheers! 🥂
