Stuffed acorn squash. The stuffing is chopped peppers, onion, and celery. Ground sausage. I whirled up some rosemary and oregano in one of my small blenders. Grated parmesan cheese is in the stuffing, but the stuffed squash is covered with grated cheddar cheese. I put this together earlier and it's warming up in my slow cooker.
Salad is sliced tomato and feta cheese with shallot vinaigrette. Chopped basil.
Kombucha: ginger lemon.
Dessert: Chopped pear and Greek yogurt with toasted walnuts. Decaf coffee.

Vanilla pudding and teaspoon of cool whip before bedtime.

My wife and I are meeting a couple other couples at Ruths Chris. I know its a chain, but it hits the spot on occasion!

(1,354 posts)Wild caught Gulf shrimp marinated in evoo, minced garlic, paprika and Old Bay seasoning. Air-fry for 3.5 minutes at 375 degrees for perfect shrimp. Served with steamed cauliflower and sliced mushrooms mixed with whole wheat couscous and Miyokos butter. Strawberry chia pudding for dessert. Cheers! 🥂
I started some sprouts Monday and they were ready to use today. Used some sweet onion, Gouda cheese, avocado and buttermilk ranch. Simple and tasty.
