Home made taco seasoning mix
I've been making this so long I do not recall source.

2 generous tablespoons to 1 # of ground meat. I have NOT tried this with plant based substitutes yet

1 tablespoon chili powder
▢1 teaspoon ground cumin
▢1 teaspoon garlic powder & onion powder
▢½ teaspoon paprika (or smoked paprika)- smoked is much better
▢½ teaspoon oregano
▢½ teaspoon kosher salt- I don't use this b/c of BP issues
▢¼ teaspoon black pepper
1/4cayenne pepper if you like.
This is 1# of taco seasoning. I make a triple batch & store it in 3 zip locks.

While the onions & ground meat cook, microwave the flour tortillas under a damp papertowel.

Take one flour tortilla and spread about 2 tablespoons of refried beans down the middle. Top beans with a ¼ cup of ground beef. Top beef with diced raw onions [yes more onions]. Roll tortilla. Repeat until all tortillas are filled.
Place rolled tortillas seam down on lightly greased 9x13 baking dish.
Cover tortillas with red enchilada sauce.-green sauce works too
Finely shred cheddar cheese.
Top enchiritos with cheese.
Bake in the oven at 350 degrees for 15 minutes.
Allow your enchiritos to rest for 5 minutes. Top with sliced black olives and serve.


I have frozen these1 tablespoon chili powder
▢1 teaspoon ground cumin
▢1 teaspoon garlic powder
▢½ teaspoon paprika (or smoked paprika)
▢½ teaspoon oregano
▢½ teaspoon kosher salt
▢¼ teaspoon black pepper
▢pinch of red pepper flakes or cayenne pepper, optional


I have frozen leftovers & added a bit of water & more cheese when I reheat

It's been a gray and darkly cold day with several inches of new snow. We've hunkered down, built a fire and worked from home.

The Landlady decided that comfort food was in order so she started early and got the stew in the crockpot by noon. She's planning to serve it with mashed potatoes and a green salad. A bottle of Burgundy is in order and we have some dark chocolate from Panama for dessert.

Steam-fried in evoo and veggie broth: chopped onion, sliced carrots, chopped green pepper, sliced zucchini, sliced mushrooms and minced garlic. Stir in homemade marinara sauce, cooked whole wheat spaghetti and top with a microwaved and chopped Trader Joe’s plant-based Italian Sausage link. Sprinkle with vegan parmesan. Cheers! 🥂
