What's for Dinner, Sat., Feb. 1, 2025

Wheat crackers with sliced sausage, onion. Sweet peppers, celery sticks, and stuffed olives.

Cup of chicken-spinach soup.

Kombucha: ginger.

Dessert: Sausalito cookie with hot tea.

1. Roasted chicken, mushroom stuffing, stuffed mushrooms

I used the ingredients for mushroom souffle, no eggs, used about 1/4 cup of mayo. I used less butter, so it came out with a nice texture and flavor. Roasted the chicken in my Le Creuset Dutch oven, lots left for soup and other meals. I used some of the stuffing to fill the rest of the baby bella mushrooms.

Guess who has a lot of dishes to wash?

2. Italian Stir-Fry with Pasta

Steam- fried in evoo and veggie broth: sliced carrots, chopped red bell pepper, sliced red onion, broccoli florets, sliced mushrooms and minced garlic. Add cannelloni beans, chopped fresh basil, parsley and Penzy’s Italian blend herbs. Toss with red lentil rotini and some Miyoko’s butter to add some richness. Sprinkle with vegan parmesan. Cheers! 🥂

3. Garlicky cabbage soup

My favorite Farmers Market vendor had a sale at their farm, so we got a couple cabbages, onions, and apples. The cabbage and onions are going in the soup, and some of the apples are in a crisp.

(I chopped up six large onions to freeze this morning, and the Northern Spy apples we got will be made into applesauce tomorrow. Lotsa work taking care of the produce, but worth it.)

with carrots, turnips, sweet potatoes, onions, and parsnips. One of my favorites for a chlly, rainy winter day.
