What's for Dinner, Wed., Jan. 29, 2025

Salad is beets with goat cheese, served over lettuce. Citrus vinaigrette.

Turkey cutlet with panko/macadamia nut crust.

Kombucha: pineapple peach.

Vanilla ice cream with strawberries for dessert.

2. Happy Lunar New Year

Had Dim Sum with a friend for lunch. Was excellent. I don’t have leftovers but went to the milk bread bakery next door and got some ham and cheese rolls and a sticky rice pudding pie (special treat today made for one person) for later. Will snack on those during my shift.

fish sticks

I prefer a regular piece of fish (cod, haddock or salmon) but I think AL enjoys the nostalgia of fish sticks

Birthday pie for dessert (AL turned 70 yesterday). It's a "Razzleberry" pie.

Got GREAT news from his surgeon today... his PSA number--one month out from surgery--are TERRIFIC. Pre-surgery he was at 19 (which is not good at all) and this week he's at 0.02.

They will continue to monitor every 3 months over the next few years.

Doc says that the rest of his recovery is very much in line w/ what he would expect. AL is frustrated w/ his progress, but doc says that healing takes time.

Referral to physical therapist who specializes in the pelvic area. This should help w/ some of the post-op unpleasantness.

7. Broccoli "Beef" and Mixed Veggie Stir-fry

Steam-fried in sesame oil and veggie broth: chopped red onion, celery, carrots, red bell pepper and minced garlic. Add broccoli florets and sliced mushrooms. Add air-fried Beyond Steak pieces and mix with sesame garlic sauce. Serve over brown rice. Garnish with chopped scallions. Happy Lunar New Year! 🥂

8. Stir fry with duck and cabbage

Went out for dinner last week for my birthday, and brought home the leftover duck. So I'm stir-frying it with onions, Napa cabbage, and black bean sauce, to go with the last (I hope) of the Chinese takeout from Monday.
