What's for Dinner, Thurs., Jan. 23, 2025

Pear watercress salad with Brie.

After that it's all my imagination--I'm going through the refrigerator using up whatever I can. If I come up with something ingenious, I might post back!

Blueberry basil kombucha.

Dessert: hot chocoalte with marshmallows.

As for me? I haven't a clue. I'm on puppy time and it has me a little disoriented. In a good way though. I may have a can of soup. My quick go to:

3. Lentil Vegetable Soup

Made a huge pot this afternoon so the house smells fantastic. Green lentils cooked in veggie broth and water with bay leaves. Veggies steam-fried in veggie broth (in a separate pot): chopped onions, celery, carrots, red bell pepper, cabbage, zucchini, and minced garlic. When done add to the lentils and stir in tomato paste, fire roasted tomatoes, sliced mushrooms and steamed peas. Finally season with oregano, thyme, parsley and S&P. Multigrain toast on the side. Cheers! 🥂

Roasted turkey before I left for work on Wednesday.

Made gravy with drippings from turkey. (Sublime!)

Made brown rice last night. Cleaned out the freezer for peas and pearl onions.

Stuffed with Italian sausage black olives and onion for me. My wife doesn't like cooked onions. With garlic butter brushed on top and to dip. Mmmm, I can't wait. She's filling them now.

My friend Mitzi and I used to pick it in the waterways in Florida. This was before I found out that these waterways were filled with alligators!!!!

Busy day today. I worked a half day, came home, went to the DMV and handed them my old driver license for the THIRD time. I'm getting a Real Id license before I renew my passport. I can't travel without a passport, can't get on a plane without a Real ID (soon) and can't get a passport without an up-to-date license for ID. So whichever way you cut it, the Real Id is coming first. It's been 2 months and they're still mixing up the documentation I provided as asked the first time.

Then we ate and continued on to pick up the new TV/DVD combo, bought before any tariffs can take effect. I hate buying something right now, but the old one crapped out - the sound was like listening to people talking from inside a hornet's nest.

Came home, set it up, and started a DVD for DH - Up, the Pixar animation. Then I went to cut up 2 large chickens to freeze and can, but had to alternately come in to figure out the new tv controls and also defend the chicken from the cats.

The frozen is in the freezer and the rest is in the fridge. I was going to stay up late and get it in the jars, but I've been called in to work tomorrow. At least it'll be overtime. I'll can tomorrow night. Meanwhile, I balanced the books, am doing laundry and have to go down and get all the raw chicken bowls into the dishwasher.

I'm sure the fascists would consider me a useless eater at my age. I wish they'd all unscheduledly deconstruct themselves.
