What's for Dinner, Sun., Jan. 19, 2025

A friend brought me a big container of chicken tortilla soup. I have artisan bread and muffins I can toast to go with it.

Good thing, because I've been busy with snow prep. Five inches expected here.

Raspberry ginger kombucha.

Dessert: almond flour chocolate chip cookies with no-sugar added hot chocolate.

"Only 5 inches? Hardly worth putting on your boots for that!" I've been complaining about how cold it was today in the Bay Area when it didn't break 50 - but then I got rid of all my winter clothes a long time ago.

3. Bean soup

Great northern beans in ham stock with chunks of ham, carrots, onion, celery, and garlic. I decided to kick it up a notch and added a can of diced tomatoes and green chilies. It is quite different to the usual I make. The jury hasn't returned a verdict yet.

We've just got rain and snow showers. No accumulation here.

The tomatoes make it sound like some traditional Italian recipes, and the peppers should add a kick

Had vegetable pakoras as an appetizer. Garlic naan bread with chana masala and tofu jalfrezi for main dishes. Ordered vegetable biryani to go for tomorrow’s lunch. Everything was delicious. Cheers! 🥂

I bought a 12 oz package of mini beef meatballs (frozen). Threw them in a soup with carrots, celery, yellow onions, and mostly chicken soup base. Tasty.

11. It's going to be leftovers week

tonight we're making a pizza with the leftover cheese from last week (why does it only come in a Too Big size?), drabs of various sauces, caramelized onions, sun-dried tomatoes, and the lone tiny pepper in the garden (it's growing in a pot, and is going into its 3rd year)
