Is it just because it's what you have in the house? The main utility of ghee is that it doesn't burn at high heat on the stovetop - not an issue while baking.

Butter solids are delicious in baked goods, why would you exclude them?

Maybe add a little extra vanilla or something to amp up the flavor?
