seems they are a minimum of 4.5 lbs. Sometimes Publix has those Springer Mtn. small chickens and, when they do, I usually buy extra to stick in the freezer.

I haven’t made a whole chicken in years, but that recipe could convince me. Love tarragon with chicken, especially in chicken salad. Lemon, leeks, and orzo sound perfect together.
