What's for Dinner, Thurs., Jan. 2, 2025

Creamy red lentil soup. Has coconut milk in it.

Tossed green salad with slices of turkey breast, avocado, and turkey bacon. Also cherry tomatoes, celery, green pepper, cucumber, and red onion.

Pumpkin muffin, toasted.

Blueberry kombucha.

For dessert, no-sugar added vanilla ice cream and a chocolate cookie. Cup of hot chocolate.

5. Beans, Vegetables and Rice Provencal

Steam fried in evoo and veggie broth: diced celery, carrots, sliced broccoli and cauliflower, chopped shallots, onions, and minced garlic. When almost done add chopped fresh tomatoes and cooked black, navy beans and steamed peas. Turn off heat and add fresh thyme springs and chopped parsley. Let stand for 10 minutes. Take out sprigs. Mix with cooked brown basmati rice. S&P to taste. We like to use hot sauce with this dish. Iced green tea with lemon. Cheers! 🥂

P.S. I bought the 7 lb. duck for $7 the day after Xmas. It cost $37 Xmas Eve.

made with the shell from the NYE crab and the leftover crab meat, with a sourdough baguette and a Waldorf salad (I was inspired by an earlier poster. It's technically not a Waldorf salad, since I'm using the last of the pecans I got early last year from my Texas connection)
