What's for Dinner, Thurs., Dec. 26, 2024

I had to pull something out of the freezer because I've been so busy: Italian sausage, tortellini, red sauce, green peppers and onions. Warming up in the slow cooker now.

Hopefully I'll have some time to stop at the store on the way back and get something different for dessert.

Leftover mashed butternut squash.

Leftover mac and cheese.

Cranberry orange sauce.

Maybe cinnamon buns.

Ice water or apple juice.

with a purchased cake for dessert.

We spent Christmas day with my future DIL's family so we don't have any leftovers to break out.

I'm under the weather today (from sinus issues, a uti, and burning the candle at both ends trying to finish crafts for Christmas). At 61yo, I can't stay up until 4am like I used to! I told my brother the tree is still half naked and the house looks like rabid elves were having a party here, but he is still coming over for dinner, plus he's bringing his son and 3 teenage grandsons with him. I have 2 hrs before they arrive. The salmon is thawing but I have to get cracking on the mac/cheese because I like to bake it with extra cheese on top to brown the edges.

Leftovers from our Christmas Eve dinner. Cream of mushroom soup made with Miyoko’s butter and oat milk and sauerkraut pierogies. My wife is making a tomato-cucumber salad with dill dressing and steam cabbage. Rye bread and butter. Leftover coffee cake or apple pie for dessert. Cheers! 🥂

Angus beef patties stuffed with cheddar cheese. Pan fried ending with more cheese on top. Served on toasted Brioche buns with lettuce, tomato, red onion slices and Claussen pickles. Ketchup and spicy brown mustard to taste. Homemade sweet potato fries and Cole slaw on the side. North Carolina IPAs.

A can of Progresso split Pea with ham soup up in the microwave. Italian bread toast with sharp Cheddar cheese in the broiler. Whole milk on ice. Two lemon iced shortbread cookies.

Of course, the ham is leftovers, as is the bread. A lot of the ham is getting frozen, but we'll still be eating it for a few meals this week. I had a ham sandwich for breakfast this morning.

The hash browns were a test of my first foray into canning potatoes. They were supposed to be very small red/waxy potatoes, peeled and canned whole. I'm not fond of reds (too waxy), and the recipe was very insistent that russets wouldn't work, so I got gold. Since they were peeled anyway and I didn't want to pay for petite potatoes, I just cut regular sized golds up in designer potato-sized chunks.

I only did one batch, in case they didn't work well. I needn't have worried. They're done through, but firm enough to use for just about anything (but mashed). I'll be doing this again.

Now on to cake for dessert, and the last of the coquito.

and the leftover beet salad. Using up the leftovers from Christmas Eve - I scored some wild porcinis that needed to be used up soon.
