What's for Dinner, Wed., Dec. 4, 2024

Cod fillets, breaded in panko and served with lemon and homemade tartar sauce.

Cucumber salad.

Zucchini fritters.

Kombucha is ginger turmeric.

Desserts: a couple little ice cream cones. Decaf coffee.

Which then needed added light cream to give it some flavor....and whole wheat bread. Tomato, mozzarella and basil salad

3. Snow Peas and Crispy Tofu

Steam-fry in evoo and veggie broth: sliced carrots, chopped red bell pepper, scallions and garlic. Add snow peas and sliced mushrooms. Toss with air fried crispy tofu cubes and a light hoisin sauce. Organic basmati rice on the side. Hot black tea with lemon. Raspberry chocolate tapioca pudding for dessert. Cheers! 🥂

Squeeze out water and cut into quarters, then cut into small cubes. For this dish I use only 2 of the quarters for 2 servings. Toss in a little bit of oil until coated. I air fry at 375 degrees for 8 minutes, giving the cubes a quick toss at the 4 minute mark. For the hoisin, I just used bottled hoisin that I thin out with a bit of veggie broth. You can add crispy tofu to so many dishes, soups, casseroles, stir-frys, spaghetti sauce. Very versatile. Hope you try it.

Drx I’ve used in the past have suggested tossing the cubes in cornstarch. Works pretty good.

I like your hoisin sauce tip; gonna’ give that a try.
