What's for Dinner, Mon., Dec. 2, 2024

Shrimp salad and maybe later some turkey wild rice soup. The salad turned out incredibly good because of 3 things I did:

1) used a head of Boston lettuce
2) cooked the shrimp in butter and garlic, using orange peel, sesame seed, and chile
3) put toasted pumpkin seeds on top

I had already prepped the salad, so adding these items was quick and easy.

Pomegranate kombucha.

For dessert, a mug of hot chocolate and vanilla tea biscuits with a square of milk chocolate.

1. Salmon and rice

I stopped at Aldi and got a 2 lb slab of salmon for half price. I divided it into 7 portions, sauteed a piece in butter and spices.

One of our favorites. This time I added some thinly sliced parsnips to all the other usual vegetables and used homemade vegetable broth as the base. Sliced snow peas were added right before turning off the heat to add a little crunch. Toasted sprouted multigrain brain and Miyoko’s butter. Thinking about some white wine but probably won’t. Cheers! 🥂

about to work on yesterday's overcooked salmon from s-b-t sandwich (w remoulade, which I HOPE works!) and later, favorite dark choc pomegranate + blueberry bark.

6. I boiled the turkey breast carcass

Enriching the stock I already made and pulled all the rest of the meat off.

I made a small amount of egg drop soup out of some of it with frozen peas. That was my lunch.

Then I made homemade egg noodles to use up the rest of the broth. They turned out great. Light and fluffy for the size of noodle that I cut them into. Yummy leftovers!!
