Golden potatoes quartered, then soaked in olive oil, rosemary, and a pinch of sea salt. Then placed on a baking tray, and roasted in the oven.

Look up a recipe. Simple but gourmet level.

We’ve been making them for a while now, especially when having company for dinner. We’ve never gotten so many compliments over a dish!

my son makes the best buttermilk mashed potatoes, good with butter or gravy, although the ultimate would be topped with my late mom's pot roast gravy.

that said, pretty much all forms of potatoes are yummy, this thread is making me hungry!

If I was a potato, it probably prefer to be neither cooked nor eaten... though I think I'd rather enjoy being slathered in sour cream!

I used to love them baked as a kid with the roasted skin being my favorite part. I would spread butter on it and roll it up--yum.
I am a little partial to Greek roasted potatoes right now with a lemony olive oil flavor and a titch of oregano.
Mashed potatoes are still a comfort food that is hard to beat, especially with gravy (mine is vegetarian).
My kids love my smashed potatoes with a sprinkle of shredded Parmesan and rosemary (drizzle of olive oil, too). Creamers work best.

maybe being "roasted" would be a refreshing change, increase my overall visibility with the public via social media, and possibly motivate me to get out of bed before noon.
