(snip) But swaddle a grilled hamburger patty and some refried beans with that fluffy white blanket and, miraculously, the assembly is no longer a burrito: It's a Mexican hamburger. (good handful of crunchy chicharrones thrown on top).

(snip) The Pueblo Slopper is a legendary burger creation that originated in Pueblo, Colorado. It consists of a juicy beef patty, topped with a generous ladle of Pueblo Green Chili, melted cheese, and garnished with onions and lettuce. The secret ingredient that sets this burger apart is the Pueblo Green Chili, a savory and slightly spicy sauce made from roasted green chilies, garlic, tomatoes, and a blend of spices.

(9,947 posts)We would eat lunch there maybe once a week. It was a tiny, no tables, stand-in-line joint that always had a 10-15 minute wait for your order but damn well worth it. Back then, its location was in a part of Denver you might not want to find yourself in after dark. Their version of a MH was one of the best in town, the other being a bar/restaurant, no longer there, near 7th and Sante Fe Drive.
Ive not lived in Denver for 45+ years but at my last visit, I was in the neighborhood and was pleasantly surprised to see that Chubby's was still there, in the same spot but with a fancy, new sit-down establishment. Of course I stopped in, ordered their Mexican Hamburger and am happy to report it was exactly as I remembered. That area has a safer vibe then I remember too and looks to be just slightly more gentrified.
I dont know about Pueblos Slopper, but next time in NW Denvers 38th & Mariposa neighborhood, I say stop in at Chubbys and see for yourself.
Thanks for the post AND the memories.
